Im not the best at explaining, but when an animation is choppy, it's like when the spacing is messed up and its constantly speeding up and slowing down. Spacing of course is like the distance you move in each frame. Like a basic eased movement would have spacing like;
|-|-|--|----|-------|-----|---|--|-|-| (lines represent spacing ofc)
where it speeds up then slows down, but a choppy movement would be like
|--|-----|---|-----|-|---|------|--|-|---|
a bit of a silly example but i suppose it gets the point across VV
